  1. Roast the vegetables

    Preheat the oven to 425°F (220°C). Toss the squash cubes, onion and garlic with the olive oil, salt and pepper. Spread on a sheet pan and roast 25–30 minutes, until caramelized and fork-tender.

  2. Simmer

    Transfer the roasted vegetables to a large pot. Add the drained white beans, vegetable broth, cumin and smoked paprika. Bring to a gentle simmer and cook 10 minutes.

  3. Blend

    Purée the soup until smooth with an immersion blender, or work in batches in a countertop blender with the lid vented so steam can escape.

  4. Finish

    Stir in the light coconut milk and heat through gently without boiling. Season with salt and pepper to taste.

  5. Serve

    Ladle into bowls and top with toasted pumpkin seeds, a drizzle of tahini and fresh herbs. Makes 4 generous servings.
