Instructions
5 steps · about 20 minutes total
Make the dressing
Whisk the olive oil, lemon juice, oregano, a pinch of salt and plenty of black pepper in a small bowl.
Marinate the chickpeas
Toss the chickpeas with half the dressing and let them sit for 10 minutes. It's the fastest way to get flavor into canned chickpeas.
Chop the vegetables
Dice the cucumber, halve the tomatoes and slice the red onion thinly. If raw onion is too sharp for you, soak the slices in cold water for 5 minutes.
Assemble the bowls
Divide the quinoa between two bowls. Arrange the chickpeas, cucumber, tomatoes, olives and onion on top.
Finish
Crumble over the feta, drizzle with the remaining dressing and serve. Add a handful of fresh parsley if you have it.
Why this helps
Plant-powered iron and fiber
Chickpeas and quinoa are among the best plant sources of iron and folate, and this bowl pairs them with vitamin C from lemon and tomatoes. That combination is what actually helps your body absorb plant iron. With 12 g of fiber, it also covers nearly half your daily fiber needs in one meal.
