  1. Boil the pasta

    Cook the spaghetti in well-salted water until just shy of al dente (about 1 minute less than the package says). Reserve 250 ml of pasta water before draining.

  2. Sizzle the aromatics

    Meanwhile, warm the olive oil (plus a spoon of the sardine oil) in a large skillet over medium heat. Cook the garlic and chili flakes 1-2 minutes until the garlic is pale gold, not brown.

  3. Add sardines and lemon

    Add the sardines, breaking them into large chunks with a spoon, plus the lemon zest. Toss gently for 1 minute so the fish warms through and picks up the garlic oil.

  4. Emulsify

    Add the drained pasta to the skillet with the lemon juice and a splash of pasta water. Toss vigorously over the heat until the water, oil and starch form a glossy sauce that clings to every strand, adding more pasta water as needed.

  5. Serve

    Off the heat, fold in the parsley and parmesan. Divide among warm bowls with extra chili flakes and black pepper.

Do sardines make the pasta taste fishy?
Less than you'd think. Good canned sardines in olive oil taste meaty and savory, not fishy, and the lemon, garlic, chili and parmesan are specifically there to keep everything bright and balanced.

Do you eat the bones in canned sardines?

Can I use fresh sardines?

Canned mackerel is the closest swap (similar omega-3s). Canned tuna works too, but you'll lose the calcium since tuna has no edible bones.
