  1. Blend the batter

    Add everything except the blueberries and pan oil to a blender. Blend 30–45 seconds until completely smooth. Let the batter rest 5 minutes — the oats hydrate and the pancakes get fluffier. It should be thick but pourable; thin with a splash of milk if needed.

  2. Heat the pan

    Heat a nonstick skillet over medium-low heat with a thin film of oil. Cottage cheese batter browns faster than regular batter, so medium-low is important.

  3. Cook low and slow

    Pour ¼-cup scoops of batter and cook 2–3 minutes until bubbles appear and the edges look set. Flip carefully and cook 1–2 minutes more until golden. Keep finished pancakes warm in a low oven.

  4. Serve
