  1. Cook the quinoa

    Simmer the quinoa in 340 ml salted water for 15 minutes until the tails unfurl and the water is absorbed. Rest 5 minutes, then fluff with a fork.

  2. Char the corn

    Sear the corn in a dry hot skillet for 4-5 minutes until charred in spots. Set aside. The caramelized edges make the whole bowl taste smoky.

  3. Warm the beans

    In the same skillet with the olive oil, warm the black beans with the cumin, smoked paprika and a splash of water for 4 minutes. Lightly mash a few beans to make them creamy.

  4. Prep the fresh toppings

    Dice the avocado and red onion. Toss the avocado with half the lime juice immediately so it doesn't brown.

  5. Assemble

    Divide the quinoa between two wide bowls. Top with the spiced beans, charred corn, avocado and onion. Finish with the remaining lime juice, cilantro, salt, pepper and lime wedges.
