  1. Mix the patties

    Flake the drained salmon into a bowl, removing any large bones or skin. Add the mashed sweet potato, eggs, oats, dill, lemon juice, dijon, garlic powder, 1 teaspoon salt and pepper. Mix gently — overworking makes them dense. Rest 10 minutes so the oats bind.

  2. Form 8 patties

    Divide into 8 equal patties, about 2 cm thick. Wet hands prevent sticking. If the mix feels soft, chill 15 minutes — cold patties hold their shape better in the pan.

  3. Crisp them golden

    Heat the oil in a large skillet over medium heat. Cook the patties 4–5 minutes per side until deeply golden and crisp. Do not crowd the pan; cook in two batches if needed. Drain briefly on a wire rack, not paper towels, to keep the crust crisp.

  4. Serve

    Serve warm over salad greens with lemon wedges and a quick yogurt-dill sauce (yogurt + chopped dill + lemon + salt). They are also excellent cold in lunchboxes.

Canned salmon — is it as good as fresh here?
For patties, honestly better: it is already cooked, flaky, affordable, and the bones (edible, calcium-rich) mash right in. Save fresh salmon for fillets.
Do I eat the bones and skin?
Pick out the skin and any large vertebrae, but the small soft bones mash in invisibly and add meaningful calcium. You will not notice them.
Why sweet potato as the binder?
It binds without breadcrumbs, adds potassium and fiber, and keeps the patties moist. Mashed regular potato works too.
Can I bake instead of fry?
Yes — 200°C (400°F) for 20–22 minutes, flipping halfway, on an oiled sheet. Slightly less crispy but much more hands-off.
