  1. Start the oats

    Bring the water or stock to a boil with a pinch of salt. Stir in the oats, reduce to a gentle simmer and cook 8–10 minutes, stirring occasionally, until creamy. Stock instead of water is the savory-oatmeal secret.

  2. Sear the mushrooms

    Meanwhile, heat 1 tablespoon of oil in a skillet over high heat. Add the mushrooms in a single layer and do not touch them for 3 minutes — this browning is where all the flavor lives. Stir, add garlic and soy sauce, and cook 2 more minutes.

  3. Wilt the spinach

  4. Fry the eggs
