Build the sauce
Heat the oil in a large oven-safe skillet over medium heat. Cook the onion and bell pepper with a pinch of salt 6–8 minutes until soft and sweet. Add garlic, cumin, paprika and chili flakes; cook 1 minute until fragrant.
Simmer with beans

Wilt the spinach

Finish and serve
